Cheesy Broccoli Casserole

Most people love the fall season for sweater weather, pumpkin spice, and to see the leaves change. Being from Florida and having a cinnamon allergy, none of those things appealed to me but I still loved the fall. The fall season to me is full of time with friends and family and food. I have always been a social butterfly, and I love food so combining those things was a magical time of year for me. 

Since I was young, I have seen family recipes that have been passed down and seen new recipes come and some stay and some go. This particular recipe is one my aunt brought for Thanksgiving one year and it hasn’t left. Even my dad and brother, who hate vegetables, will eat this one. 

Cheesy Broccoli Casserole 

Total Time: about an hour

Ingredients

Directions

  1. Heat oven to 375°F (this is important for later) 
  2. Fill a large saucepan or pot with about 1 inch of water and place in a steamer basket and bring to a simmer. Place in broccoli and steam for about 3 to 4 minutes (until tender). Remove broccoli and place in a bowl.
  3. In a medium saucepan, melt butter over medium heat. Don’t let it burn. Then add in flour and stir for about 2 minutes. Then whisk in milk and simmer about 3 to 4 minutes until slightly thickened.
  4. Remove from heat and stir in 1 cup cheese, salt, and pepper to liquid and then toss with the broccoli.
  5. Transfer the mixture to a baking dish and sprinkle with the remaining 1 cup cheese. Bake in now pre-heated oven for 35 to 40 minutes or until bubbling and golden brown.
  6. Let sit 10 minutes then serve and enjoy!
